Chai Spiced Banana Bread - Eggless too ! 

Chai - that one word evokes so many emotions - comfort, passion, luxury .. different for each one of us. Although I don’t drink tea or coffee, I do appreciate the aromas of both the beverages. It is usually filter kaapi in the morning and cardamom chai / Ginger Tea / Masala Chai in the evening for the family. Homemade Chai Masala (recipe coming soon!) added to everyday tea leaves makes it aromatic, inviting.

Prep time - 15 mins, Bake time - 35 to 40 mins

What you need:

DRY INGREDIENTS:

  • 1.5 cups whole wheat flour
  • ½ cup grated jaggery
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 tablespoon Chai masala (made with clove powder, cardamom powder, ginger powder, nutmeg ground and many more spices)
  • ⅛ teaspoon sea salt
  • 2 tablespoon walnuts chopped fine (skip for Nut allergy)
  • WET INGREDIENTS:
  • 2 tablespoon ground flax meal ( or use egg replacer 2 teaspoon in 6 tablespoon warm water)
  • 6 tablespoon warm water
  • 2 small to medium bananas mashed
  • ⅓ cup Olive oil (used olive oil)
  • 1 teaspoon vanilla extract
  • ⅓ cup plant based milk (or use normal milk)
  • ⅓ cup Choco chips (optional)

How to make Chai Spiced Banana Bread:

  1. Sieve the dry ingredients twice over (listed above) except jaggery. 
  2. Mix the ground flax meal in the warm water and keep aside for 15-20 mins till it appears gooey / frothy
  3. Pre heat oven to 180 C. Grease and line a loaf pan ( I used a 9 X5 pan)
  4. In another bowl, add the jaggery, milk and oil and mix well till jaggery dissolves.
  5. Add the vanilla extract and the mashed banana puree. 
  6. Add half the Choco chips (if using) and mix well for a homogeneous mixture.
  7. Fold half the dry ingredients into the wet mixture at a time.
  8. Gentle fold the rest of the dry ingredients to a  pouring consistency.
  9. If the mixture is too dry even after this, use the warm water, a teaspoon at a time to ensure a batter free of dry flour
  10. Add this batter to a lined pan
  11. Top with rest of the Choco chips and walnuts
  12. Bake at 180 C for 35-40 min or till a skewer comes clean.
  13. Cool on a wire rack and slice when warm.
  14. Top with powdered sugar or chocolate syrup if you wish 🙂

Ingredients
  

DRY INGREDIENTS:

    A delicious and aromatic bake Kalyani. Love adding chai masala to my bakes and have also tried banana bread with it. Adding the spice mixture definitely makes it perfect for the festive season. Chai Spiced Banana Bread is a perfect option for Christmas breakfast.

    Banana Bread in a new avatar ... flavored with chai spicce. I do make chai masala cake but a banana bread with chai masala is incredible. I love that you have used jaggery instead of white sugar. It's indeed a guilt free treat.

    I love chai masala in my bakes. Yesterday made a cake with chai masala. Love the lovely aroma. Your chai spiced banana bread looks so soft and delish. Definitely its a healthy treat. A must try recipe.

    I am a big fan of banana bakes in form and I am literally drooling over the screen. I had made something similar and it reminded me of that bake. Aren't bananas so forgiving? I could eat them as breakfast and snack... hehe...
