Baked Vegan Mini Chocolate Donuts are an exotic mini chocolatey treat to indulge as a snack or breakfast, Perfect for a party or putluck too.

Why Baked Donuts ? but why not??

Doughnut. Donut. Dont care what it is  spelt as .... they were baked, they were chocolatey and we loved it 🙂 ...and did I do a happy dance or what!! Donuts sits right there on top on my list of indulgences... the warmth of the cinnamon sugar with the gooey goodness of the sugar glaze (I am not a so chocolate person), and it makes me go weak at the knees..

So, I seized this opportunity to just not make them at home, but bake them (no deep fried ones for us!!)

.... and a chocolate one at that .. ! deliciously super (I am running out of adjectives :D) This couldnt get any better.. the kids were starry eyed at seeing these being made at home (the elder one shares my love for these). And they hugged me so much .. such a lovely feeling.. warmer than the cinnamon sprinkled topped ones , dont you say ? :)).. and that for me was the best #Valentines ever 🙂

I made a small batch (about 10 donuts). And they came out super good !!

Tips and tricks to make these Baked Mini Choco Vegan Donuts:

  1. Oven Baking times may vary. See what works for you, till a skewer / toothpick comes out clean
  2. Bring all ingredients to room temperature before using
  3. As this is an eggless (and vegan) recipe, the texture might be different if using whole wheat or All purpose flour in place of pastry flour.
  4. If you are omitting any / adding any ingredient from the above list, the baking time and output may vary.  
  5. If the bread is browning too fast, tent the baking pan with aluminium foil quickly 
  6. I used a Donut dimpled plan. If you use any other pan, the bake time would vary slightly. Keep an eye on the rising bake.

What you need to make Baked Vegan Mini Donuts

  • ½ cup + 2 tablespoon pastry flour
  • ¼ cup Sugar (powdered and measured)
  • 3 tablespoon dutch processed cocoa powder (or any fine cocoa)
  • ⅛ teaspoon Baking soda (+ a teeny weeny pinch)
  • ⅓ teaspoon Instant Coffee
  • ¼ teaspoon Salt
  • 3 tablespoon Oil (any neutral oil would do)
  • 1 tablespoon Vegan butter (use any butter if you don't need this to be vegan)
  • ½ teaspoon Vanilla extract
  • ¼ cup Water (+ 1 tablespoon as needed)

Glaze / Frosting:

  • ⅓ cup Icing Sugar (increase as per preference)
  • 2 tablespoon Vegan Butter
  • ½ cup Vegan Chocochips (replace with normal choco chips if not vegan)
  • ¼ teaspoon Vanilla extract

How to make Baked Vegan Mini Donut

  1. Preheat oven to 175 C + grease your donut pan 
  2. Sieve together the pastry flour, sugar, cocoa, baking soda, coffee powder, salt. Combine well with a whisk
  3. Add oil, vanilla , water and whisk till smooth
  4. Pour ¾ into the donut moulds and bake for 10- 12 till done.
  5. Cool on a wire rack for 10 mins. 
  6. To prepare the glaze, melt the chocochips on a double boiler. Take off the heat and when still warm, add in the butter, essence and icing sugar . Whisk well to velvety smooth.
  7. Dip the cooled donuts in the glaze and place on a wire rack to collect all drips. Top with any sprinkles as required. 
  8. Enjoy warm. Keeps upto 2 days . warm for 15 secs in a microwave once taken out of freezer.

Equipment

  • donut pan
  • Spatula
  • piping bag
  • Bowl

Ingredients
  

  • ½ cup + 2 tablespoon pastry flour

    Like these mini donuts. The ready made ones are so big and fried and mostly find them too sugary. These choco mini donuts are just perfect for that indulgence - small and baked.
