Equipment

  • Oven
  • Grater
  • Bowl
  • Whisk
  • Parchment Paper

Ingredients

  • 1.25 cups Whole wheat flour or bread flour - see Notes
  • ½ cup All purpose flour
  • 2 tablespoon Sugar adjust to taste
  • teaspoon Salt
  • 1 teaspoon Cinnamon powder
  • 1.5 teaspoon Baking powder
  • 3 tablespoon Cold butter
  • 1 Red Apple peeled and diced, approximately 200 grams
  • 8 Pecans chopped, optional - can sub with walnuts
  • ½ cup Yoghurt
  • 4 tablespoon Milk
  • ¼ teaspoon Cinnamon powder
  • 1 tablespoon honey – to glaze

Instructions

  • Sift the flours, cinnamon powder, salt, baking powder, sugar powder.
  • Now added cubed cold butter (I grated cold butter into the flour as that’s easy to mix it in).
  • Rub the butter in the flour mix till it resembles bread crumbs.
  • Mix in the chopped apple and chopped pecans .
  • Whisk milk-yoghurt and leave for 2-3 mins. When the apples sweat a bit, add the milk-yoghurt mixture and make a firm , non sticky dough .
  • Oil your fingers a bit and pat. this dough directly onto a baking sheet.
  • Cut into wedges (adjust size acc to preferences – Mine made 8 largish sectors).
  • Brush a little milk and some cinnamon powder and bake in a preheat oven for 22-25 mins, at 180 Deg C.
  • Broil for 2 mins if you need a coloured top (I skipped this coz it naturally browned while baking)
  • Cool for 4-5 mins and serve warm dusting it with cinnamon powder and honey drizzled over.
  • If heating (any) leftovers, microwave it for 10-15 seconds or till just warm.

Notes

Tips to make the perfect Apple - Cinnamon Pecan Scone

  1. Sift the flours well.
  2. If bread flour isn't available, use plain flour through (the liquid proportions will vary)
  3. Make sure the apples are sweet (Red lady / Gala varieties work best). Green Apples will not work.
  4. Make sure the butter is chilled when you rub it in, else the crust will get soggy
  5. As its a moist mixture, work quickly and pat it directly on the lined baking sheet, else it gets messy
  6. For a nut-free option, you can skip the pecans or walnuts. If not, either of these nuts work beautifully.
  7. THe apples I used were quite sweet, so the sugar was just enough. Adjust sugar accordingly.
  8. As always, the bake times vary from oven to oven, Keep an eye after the 20th minute.
