Vegan udon stir-fry is a flavorful plant-based noodle dish with fresh vegetables, a spicy umami sauce and is perfect for a quick and healthy meal.

- 100 gram Udon Noodles dry
- 2 teaspoon Sesame oil
- 1 onions medium, chopped
- 1 teaspoon Minced garlic
- ½ teaspoon ginger minced
- 1 teaspoon Salt or to taste, check and add as you are using a sauce
- 1 cup Chopped veggies I used cabbage, juilenned carrots, broccoli
Sauce mix
- 2 teaspoon Sambal Oelek or to taste
- ½ tablespoon Vinegar
- 1 tablespoon Brown sugar
- ½ teaspoon Fresh chillies optional
- 2 tablespoon Sesame oil
Topping / Garnish:
- 1 teaspoon Roasted sesame seeds
- 2 teaspoon Spring onion greens chopped
Cook noodle as per pack instructions.
Drain and keep aside.
Mix all ingredients for sauce and keep ready.
In a wok, heat oil to smoking temperature, add the onions, garlic ginger, veggies and saute till onion lightly caramelises and veggies are al dente.
Do this on a high flame to get a slightly charred, yet pleasant aroma from the veggies.
Now add the sauce, boiled noodles . toss again on high flame.
Serve immediately with the toppings.
