Quinoa in everyday cooking !

Quinoa is such a versatile (pseudo) grain that it lends itself to salads and cooked dishes equally. This is our go-to salad during SUmmers and the husband man and me induige in it often during summers. It's a simple salad that's apt for the scorching summer days, and it can easily be a complete meal for one.  It's also great for potluck parties. So, go on and make this one, and let me know what other salads you love !

Health Benefits of Quinoa:

  1. Fibre can help in lowering Cholesterol and blood sugar levels. Has
  2. Rich in Anti Oxidants
  3. Good Plant based source of protein
  4. Good source of Manganese, iron and folate - making it nutrient rich

Prep time : 10 mins, Chilling time : 15 mins ; Serves : 2

Salad:

  • ½ cup Quinoa (Cooked)
  • 2 cups Watermelon (cubed)

For the vinaigrette : 

  • ½ tablespoon Lemon juice
  • ½ teaspoon Honey( maple syrup if you need it completely vegan)
  • ¼ teaspoon Red chilli flakes
  • ¼ teaspoon Salt
  • ⅓ teaspoon Black pepper (Crushed)
  • ½ cup Fresh Orange juice

To make the Watermelon Quinoa Salad

  1. Rinse the quinoa well and cook in open pot till it 'blooms'. Drain and reserve in a colander
  2. Mix the quinoa and watermelon with a fork and chill for 15- 30 mins. 
  3. Before serving, whisk all ingredients of the vinaigrette, toss the salad with the same & serve immediately, chilled.

Notes:

  • One can skip honey for a completely vegan version. Sometimes we don't add either honey or maple syurp as the watermelon is itself sweet.
  • Ingredients for the Vinaigrette is optional, go with what catches your fancy.
  • This was moderately spicy for us, but you could add or delete any ingredient of your choice.

Ingredients

    What attracted me to this recipe was the lime and chilli that goes so well with watermelon. Today it was too hot to cook and elaborate meal so I made this watermelon quinoa salad. Added some chickpeas and feta too. So yummy and filling too. Thanks for sharing the recipe.
