What is Aloo Gobhi ?
Homestyle Vegan and Gluten Free Aloo Gobhi (Potato- Cauliflower stir fry) made with basic kitchen spices. Also sometimes called Alu Gobhi ki Sabji or Gobhi-Aloo in short !
Most weeknights, we have a very simple meal of Roti- Sabji-Dal (flatbread+Vegetable Side+Lentil Curry).
Salads and accompaniments like pickle etc keep changing, but we stick to a formula to save overthinking.
Of course, meal planners are used too (especially for school days), but cooking with local ingredients is something we look forward to.

Gobhi is a veggie that is treasured where I live, but chilly days (!!) & winters makes it come alive. Sharing a simple Alu Gobhi (Potato and Cauliflower sauteed in everyday spices) that my kids love with some Homestyle Dal Tadka and Roti. This is a sabji (called Sukha Bhaaji locally- or dry saute) I learnt as soon as I moved to this city what seems eons ago, and this never fails.

Prep Time - 10 mins, Cook time - 10 mins, Serves - 2
What you need to make Alu Gobhi:
- 1 cup Cauliflower (Gobhi, cut into florets)
- ½ cup Potato (peeled and cubed)
- 1 tablespoon oil
- 1 teaspoon Jeera / Cumin seeds
- 1 Onion (medium, thinly sliced)
- 1 tomato (medium, deseeded and sliced thin)
- ½ teaspoon Turmeric Powder
- 1 tablespoon Coriander Powder (Dhania Powder)
- ½ teaspoon Cumin Powder (Jeera Powder)
- 1 teaspoon Garam Masala Powder
- ½ teaspoon Amchur (Dry Mango Powder)
- ½ teaspoon Red Chilli powder (Lal Mirch Powder)
- ½ teaspoon Salt
- 1 teaspoon Dried Fenugreek leaves (Kasuri Methi, crushed)
- 1 teaspoon Cilatnro (Kothmir / Coriander leaves, chopped)

How to make Alu Gobhi
- Wash the veggies well. Trim the cauliflower from the base and cut into medium sized florets
- Peel the potato and cube .
- Reserve potatoes and cauliflower in a bowl of warm salted water to which a pinch of turmeric has been added.
- Drain the cauliflower and potato. Blanch OR microwave them for 3-4 mins. Drain completely and reserve.
- Slice tomato and onions, keep aside.
- Heat a pan, add oil, splitter cumin seeds
- Add the onions and saute for 3-4 mins till it turns translucent. Now add the tomato and saute for 2 mins
- Now add the salt, turmeric, all spice powders except Kasuri Methi. Saute for another 1-2 mins till masala coats the tomato and onion evenly.
- Now add the blanched / microwaved potato + cauliflower. Saute for another 1-2 mins till masala coats the veggies evenly.
- Sprinkle some water - 2 to 3 TBSP. Put a tight lid on, and let it cook for 6-8 mins, stir ocassionally
- Once the potatoes and cauliflower are cooked through (soft but not mushy), finish with some amchur and chopped coriander / cilantro and crushed Kasuri Methi
- Serve hot with Roti / Phulkas alongside Dal and salad for a complete, balanced meal

Aloo gobhi was amma's speciality ..she would make it very well . Your curry reminded me off her recipe. Piping hot rotis and aloo gobhi with dahi is a best combination on a winter night.

This is the best and quick side for any meal. I too serve this curry with phulka, and is also good for lunch box. Your curry looks amazing and perfect and is a perfect way to use the seasonal gobhi.
