Rajasthani Mangodi Recipe | Moong Dal Vadi + Video Recipe

What is Mangodi or Moong Dal Vadi?

Mangodi or Moong Dal Vadi is a sun dried condiment made from lentils in North and Western India, particularly Rajasthan, during the summers. Punjabi Urad dal Badi (or simply Punjabi badi) is bigger with split or whole black gram ground coarsely with salt and spices , and then the dumplings are dried to be used during the rest of the year. Both these vadis are sun dried, deep fried (in batches, whenever being used) and add to Kadhi (buttermilk stew) or made into curries with spinach or potatoes, so Palak Mangodi kadhi or Mango Alu Sabji are very popular dishes made with these Mangodi fritters

Significance of Sun Drying

Sun Drying vegetables or local produce is not new to Indian cuisine. It is an encient, time-tested method of saving local produce as well as an ingenous way of ensuring we eat vegetables and lentils through the year, regardless of the weather outside. We have Mor Milagai (buttermilk+sun dried chillies) or Vathal (sun dried vegetables like cluster beans, lotus stems, Turkey berry (Sundakkai) etc) which are all preserved with some salt and are sun dried. Kashmiris who face very severe winters are said to preserve most local veggies like gourds, Green beans, red chillies, tomatoes and even brinjal to last them through the harsh winter days. Some families are even said to sun dry haakh (local spinach) which is said to be a local delicacy. Of course from the west, we have Sun dried Tomatoes as a popular condiment - one which is used in pesto, sauces, dips etc.

What do you need to make Mangodi

Mangodi needs basically 3 ingredients with a few addons here and there, depending on the taste

  • 1 cup Moong Dal (split green gram)
  • 3 red chillies
  • 1 inch ginger
  • ¼ teaspoon Asafoetida (skip for GF)

Optional Addons:

  • Garlic
  • Turmeric

How to make Mangodi

Wash and soak the dals in warm water and proceed with the rest of instructions as per video below

Materials

  • 1 cup Moong Dal split green gram
  • 3 Dry Red Chillies
  • 1 inch Ginger
  • ¼ teaspoon Asafoetida skip for GF
  • 1 teaspoon Garlic pods optional
  • ¼ teaspoon Turmeric optional

    I bought a pack of mangodi during my trip to Rajasthan. Since I wasn't sure of the taste, so bought one pack only. But surprisingly my family liked it. Never knew it's so easy to make. will make it soon now.

    Mangodis are so similar to the kuzhambu karuvadams that are made in South . Love the way mangodis absorb the flavor of the gravy in which it is used .always a delight to use home made vadis
