Eggless Double Chocolate Zucchini Bread - Why?

Why not - Chocolate. Zucchini. Chocochips. More Chocolate. Wholewheat.Need I say more ?

Dark chocolate interest has kicked in post my dark chocolate and chocochip brownies &  and I had to give this a go. Inspired by this recipe, I halved the recipe, tweaked it a bit to suit and there it was ! Beautiful to look at, and delicious to dig into.

Mom and the rest of the family including devoured it slowly over the weekend and quite liked it. The moisture from the Zucchini, the dark chocolate melted along with the choco chips and the toasted walnuts was quite a treat !! We couldn't taste the zucchini and the husband did a double take when I mentioned it contained the veggie. He loves healthy treats like these and went for a second serving 🙂

Why, even I had a slice and it wasn't bad at all, I was quite certain I am gonna make this especially for the kids, with the summer vacation around the corner and these treats are gonna keep their growling tummies happy 🙂

If you are a chocoholic, you dont need a reason to make this. Make sure you slice them after its cooled fully (I refrigerated it overnight - and that was the hardest part : waiting !!!). Else you may end with crumbly bits, which actually isn't a bad deal after all considering its fudgy, chocolatey and delicious too 🙂

More FAQs about this delicious Eggless Double Chocolate Zucchini Bread:

  1. Does it taste of Zucchini ? Absolutely not. You wouldn't even know if it were there.
  2. Can I do away with Zucchini? Yes, you can but you need to adjust the hydration ratio accordingly. But then it wouldnt be a Zucchini cake / bread anymore ?
  3. Can I omit the walnuts? Yes, you can make it nutfree
  4. What is the vegan substutite for yoghurt and buttermilk? Yoghurt and buttermilk can be both vegan subs of your choice (I haven't tried it personally but you may try and leave a comment below how you liked it)
  5. I don't have wholewheat flour? you can make it with only 00 flour / All purpose flour, adjust the hydration accordingly as 00 flour and APF will take slightly less water.

Let's bake this Eggless Double Chocolate Zucchini Bread

Prep time : 15 mins, Bake time : 50 mins, makes : 8 inch loaf (approx 400 gms)

Dry ingredients:

  • 100 grams Wholewheat flour
  • 125 grams All purpose flour (Maida)
  • 4 tablespoon Cocoa powder (I used dutch processed)
  • ½ teaspoon Salt
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Baking soda
  • Cinnamon powder - ½ teaspoon (opt.)
  • Ground allspice - ½ teaspoon (opt.)

Wet ingredients:

  • 1 cup Zucchini (200 gms, grated fine)
  • ¼ cup Oil - ¼ cup
  • 3 tablespoon Curd (Sub with plant based for vegan)
  • 60 ml Buttermilk
  • 125 grams Brown Sugar (increase by 2 tablespoon for more sweetness)
  • ¼ cup Semi sweet choco chips

Toppings : 

  • 4 teaspoon Roasted walnuts (Coarsely chopped) - skip for nut allergy

Method to make Eggless Double Chocolate Zucchini Bread:

  1. Preheat oven to 170 C / 325 F. Line a pan /loaf pan and keep ready (I used a non stick)
  2. Sieve all dry ingredients twice over.
  3. Mix the brown sugar in oil , mix well and add curd and buttermilk , now add in the sieved flour mix (dry ingredients) in batches till there are no dry streaks.
  4. Now fold in the choco chips and zucchini and fold well. Zucchini leaves a lot of water if left unattended so make sure you add it in last.
  5. Immediately transfer to a greased and lined pan and top with walnuts if using.
  6. Bake at 165/170 C for 50 mins or till a toothpick comes clean.
  7. Cool on a wire rack and slice when completely cool.

  • Baking Pan 9X4 pan
  • Sieve
  • Spatula
  • Grater
  • Parchment Paper
  • Pastry Brush
  • Knife

Ingredients
  

Dry ingredients

  • 100 grams Wholewheat flour

Notes

  1. Oven Baking times may vary. See what works for you, till a skewer / toothpick comes out clean
  2. If you are omitting any / adding any ingredient from the above list, the baking time and output may vary. 
  3. Check for the zucchini if it is bitter, before grating and adding it to the batter.
  4. Fold the grated zucchini till the very end as zucchini leaves a lot of water. 
  5. If the bread is browning too fast, tent the baking pan with aluminium foil quickly 
  6. I used a 9 x 5 pan. If you use any other pan, the bake time would vary slightly. Keep an eye on the rising bread.

    A month ago tried a banana zucchini bread and it came out so moist and delicious. You are so right one cannot taste the zucchini. Your eggless double chocolate zucchini bread has turned out moist and fudgy.
