Baleadas Honduras

Hondurans usually have a large, hearty breakfast. It typically consists of fried eggs (whole or scrambled), refried beans, Honduran salty sour cream (mantequilla), hard olancho cheese, avocado, sweet fried plantains, and tortillas. It is common for most households to first prepare tortillas, a staple for nearly every dish, which are used throughout the rest of the day.



Street vendors often sell breakfast baleadas made of the flour tortillas, toppings such as eggs, meat, and even pickled onions, and small tamales made of sweet yellow corn dough, called tamalitos de Elote, eaten with sour cream; fresh Horchata and posole is also common.

A Baleada is a traditional Honduran dish composed of a flour tortilla, often quite thick, folded in half and filled with mashed fried beans. It originates from El Progreso, Yoro. Aside from beans, there is a whole variety of ingredients that can be added to the Baleada. 



The most common types of baleadas are the baleadas sencillas (simple baleada) which has crumbled cheese and crema. Other common variety of baleada is the baleada mixta (mixed baleada) which has the same as the baleada simple but with an addition of scrambled eggs. (Source : Wiki)



Today, we kept it simple with homemade refried beans and topped with Cheese paired with a salad and some sour cream. Although I served this simple meal for Sunday Brunch, it was very filling, and we are sure to make this very often. 



Adapted from here, as always we made our little adaptations to suit my family's palate. 



Prep time : 15 min | Cook time : 15 mins | Serves : 4



Covering:

  • Whole Wheat Tortillas - 4 nos

Filling:

  • Cooked red beans (Rajma) - 1 cup
  • Onion - 1 small (opt.)
  • Tomato Ketchup - 1 TBSP
  • Crushed pepper - ½ tsp
  • Oil - 1 TBSP
  • Paprika - ½ tsp
  • Salt - to taste (use sparingly as the boiled rajma , ketchup and cheese also have salt)
  • Grated Cheese - as required

Salad : Chopped Cucumber,Onions, Tomato, Salt, Pepper - mix well and serve

Method:


  1. Make the filling : Heat oil, saute onions till soft, Add the cooked red beans, pepper, salt, paprika and saute well. Add ketchup / sauce if using and bring it all together. 
  2. On a flat medium hot skillet, slightly warm the tortillas and add as much filling as needed. Top with cheese.
  3. Fold and sprinkle cheese again. Cut into desired shape and serve as is or with salad and sour cream
