Khichdi is soul food for many, and especially a life saver for hostelites, students or adults living on their own. A few staple ingredients thrown together, and you have a quick meal in minutes

5 reasons to make this Oats Masala Khichdi

  • Fuss- free and uses up yesterday's (or last week's) leftover dal too
  • Super nutritious and filling , rice-free especially for diabetics or weight watchers
  • Made in under 15 minutes on those lazy weekends or super tired evenings,
  • Paired with curd / homemade yogurt abnd a pickle, it's a healthy meal by itself.
  • Cleans up the dal / leftover sabjis too from the fridge

The importance of a soluble fibre like Oats is understated in today's age. Oats is great for diabetics and is versatile to adapt into Indian dishes as well. This is again a one-pot meal (and made for just myself) as I wanted to be sure that the kids would love it as much as I did.  I had previously cooked Lauki dal (with tempering intact) so, that reduced the cook time drastically. 

Either way, it doesn't take more than 15 mins to put together this rather yummy khichdi  Goes great with a simple boondi raita / onion - cucumber raita for  lunch / brunch on hot summery days like these 🙂 perfect for #bachelors or #hostelites living alone.

Can I use steel cut oats for this recipe

I have added Quick oats / rolled oats as this is a quick, bachelor-friendly recipe. If you have time on hand, use stell cut oats, but the cook time & liquid would vary

Can I skip the veggies in this recipe?

Yes, you can skip the veggies, or use those on hand. Entirely upto you

Can any leftover dal be repurposed for the khichdi?

Any light cooked dal (like leftover moong / masoor can be used. Kali dal / Urad dal may not suit this recipe.

Can I use veg stock to make this khichdi?

Yes, use homemade / UNSALTED stock to cook the oats/. Or adjust salt accordingly.

Can I use the Instant Pot to make this recipe?

You certainly can, you may need more liquid and the cook time would vary. when I make this in the Instant Pot, shall update this recipe

Prep time: 5 mins, cook time - 10 mins, Serves  - 1

Ingredients for Oats Masala Khichdi:

  • ½ cup Cooked Lauki Moong dal ( OR you can simply soak and cook ¼ cup of plain yellow moong dal for 2 whistles)
  • ½ cup Oats (I used Rolled Oats)
  • 1 teaspoon Salt (or to taste, if using leftover dal in the recipe, adjust salt accordingly)
  • 1 tablespoon Homemade Sambhar powder
  • ¼ cup Mixed veggies (carrots / beans / peas)
  • 1 tomato (medium)
  • ½ cup of broccoli (optional, you can skip or sub with bell peppers) 
  • ½ teaspoon Garam Masala
  • 1 teaspoon Oil (can use butter / ghee if preferred)
  • 1 teaspoon Cumin seeds
  • 2 green chillies (chopped)
  • ½ inch ginger (diced)
  • 1 teaspoon cilantro / coriander leaves (totally optional)

How to make Masala Oats Khichdi

  • Dry Roast Oats in a a thick bottomed pan till fragrant ( Take care not to burn the oats). Transfer to a plate, cool
  • In the same pan, add the oil, splutter the cumin, ginger and green chillies.
  • Add the tomato, broccoli, veggies of your choice. Saute for 2 mins.
  • Add the salt. cooked dal (leftover / fresh) and mix well.
  • Add ½ cup of HOT water and cook till veggies are 80% cooked and still have a bite.
  • Once done, add the spice powder (sambhar powders and garam masala) and mix well. Add ¼ cup more HOT water and the roasted oats. Let it cook for 3-5 minutes till porridge like consistency.
  • THe Khichdi thickens up upon cooling, so cook only till thick porridge consistency.
  • Serve hot / immediately upon cooking. It doesn't taste good after it cools fully
  • Serve with Chilled homemade Curd, pickle and roasted papad for a complete meal

Ingredients
  

  • ½ cup Cooked Dal I used leftover Lauki Moong dal OR you can simply soak and cook ¼ cup of plain yellow moong dal for 2 whistles

      Oats is a relatively new thing for me too, Suma although I make Dosas and Molagapudi with it ! But I did like the taste and texture of this khichdi a lot 🙂
