Vellarikai Inji Pachadi or Cucumber and Ginger raita we make at home is a sellout success every time,as we team it with Upma,Pongal, Set Dosa, Vangibhath, BisibeleBhath or any other flavoured rice.
Earthy, rustic and homely - that's how I would describe this dish. Along with variety Rice or breakfast, we also love to have it with Parathas. The husband and my mom love to have this with Instant Pot Lapsi Upma and also rice + Vathakuzhambu (tangy spicy gravy)
Raita Varieties we make at home
Raitas are cooling especially in summer and we sometimes have it as a meal by itself, especially if am to have lunch just by myself. Whether it is my husband's signature Apple Raita, or Amma's Thambli or my grandmom's sutta katrikkai Pachadi (roasted eggplant raita),my late MIL's Vendakkai Pachadi (okra raita) or the kids' favourite Adraki Rathaloo Raita (spiced gingery - sweet potato raita), or my personal favourite Radish Raita, we make over 20+ varieties of Raita / Thayir pachadi / Mosaru bajji out in my kitchen.

Ingredients for Vellarikai Inji Pachadi
- 1 Cucumber (medium, I used British Cucumbers)
- 1 cup Homemade Yoghurt (whisked fine)
- 3 tablespoon Grated coconut (fresh / frozen)
- 1 inch Ginger (grated)
- 1 teaspoon Cumin (Jeera)
- 2 Green chillies (adjust to taste)
- ½ teaspoon Salt (or to taste)
Tempering:
- ½ teaspoon oil
- ¼ teaspoon mustard seeds
- 1 sprig curry leaves
- ⅛ teaspoon Asafoetida (skip for GF)
How to make Vellarikai Inji Pachadi:
- Peel and dice the cucumbers finely.
- Grind coconut, cumin, ginger, chillies to a fine paste using very little water.
- Whisk the curd well, free of lumps. Add the ground paste, mix well. Chill well.
- Just before serving ,add salt and if required tempering with mustard and curry leaves

Ingredients
